Quick search on google for C6 S6 headers or exhaust manifold brings up a magnaflow product, broken up into 4 parts and part numbers for a manifold system. Anyone have any experience with this? Is it a true (engine out) bolt on?

Those are not headers they are just cat replacements.
These are maybe the headers you were thinking of?
It’s humbling to feel so dumb ;D that makes sense. Would this cat be considered a better option over OEM? Would it throw a CEL?
Not only would that not work its not going to be any more power. Unless you change all of them and they are just OEM plus your going to have issues.
If you got to the point where you actually had the motor out to replace the cats. I would just eliminate them. You have to pull the motor to get to them.
Can you just remove cats and pass emissions on this car?
I was thinking of the Magnaflow oem style headers with the integrated cats. (more economical option in the short run).
Or custom headers, with only 2 big cats and all of the 8 lambdas installed under the car, for easier access.

You can’t just remove the cats and pass emmisions. If you get the JHM tune for no cats you can in most states.
I wouldn’t spend the money on the magnaflow anything. Just punch out your OEM cats and put the OEM catless manifolds back in. You have to have the 02s installed in the correct spot as if you move them too much you will get a slow response code from the ECU
