PCV Valve - Driving style - Oil Change Schedule

So my S6 is in the shop, it’s not my daily driver and lately i’ve been getting Low Oil and Low Coolant warnings while driving. I’m’ not a gear head by any means, so i’m learning things most you guys already know. I do have CEL at the moment but really don’t think it’s related to my issue.
My mechanic told me he found my oil level to be much higher than what it need to be (my fault i responded to the low oil warnings by adding oil) and also that he found water or some other fluid in my oil, he is currently trouble shooting the source.
Being the concerned parent I literally couldn’t sleep so like and idiot i’m online doing some research instead of getting rest for work in a few hrs.

I suspect part of not all of my problem is my PCV valve (But i have no idea what it does or how) and i came across this site that provided information on how it works so i thought i’d share to start a conversation on driving habits and how that affects your motor / oil change schedule.

I don’t know if this is my culprit, i’m hoping it is, BUT if the article is correct being that this car is not my daily driver and when i do drive it it’s a real short trip to the grocery store and back my motor may have collected a lot of condensation over time.
